This unique burger joint is named after the town's mascot, the Bison, and serves up delicious eats that make it an oasis of flavor in this small town. Bison Burger is a family-run venture operated by Shelby Lynn Cooney and her husband Butchy Cooney.
Shelby named the restaurant after her mother, in memory of the beloved family restaurant her mom once ran by the same name. The food truck opened its doors on her mother's birthday, a touching tribute to the woman who inspired Shelby’s passion for serving great food. And let me tell you, Bison Burger on Wheels delivers—it’s more than just a burger; it’s a bite of history, a taste of family love, and a community staple that everyone in Carlisle knows and loves.

Situated along 1400 Bobby Glover Hwy, our next stop was a newly opened spot that is quickly becoming a favorite among locals and visitors alike—The Shed Pizzeria. If you’re a pizza lover, this is the place to be! I dove into the Quattro Carnes, a must-try for meat lovers, loaded with pepperoni, sausage, bacon, and ham. The Shed’s pizzas are not just loaded with toppings; they’re loaded with flavor, passion, and heart.
Two more menu items you can't miss are The Garden Patch, a veggie delight for those looking for a fresh and flavorful option, and The BBQ Chicken Supreme, a savory blend of barbecue sauce, tender chicken, and melty cheese that hits just right. Nestled along the highway, I stopped by a place that’s well-known among the trucking community as a foodie oasis—Nick's BBQ and Catfish. It’s not just a restaurant; it’s a destination. With a welcoming vibe, fantastic staff, and a great owner in Clay Waliski, Nick's is everything you want in a local eatery.
Clay treated me to a few sips of his finest whiskey, and I finished off one of his signature burgers and some smoked sausage that left me wanting more. From the perfectly seasoned meats to the down-home hospitality, Nick's BBQ and Catfish made it clear why it's a favorite among locals and travelers alike. I promised Clay and the staff that I would be back soon to try more, and I’m keeping that promise.
